Providing flavors of licorice and anise, with a texture similar to celery, fennel is an excellent source of vitamin C, dietary fiber, potassium, manganese and folate. Fennel also contains a potent phytochemical called anethole, which has been found to inhibit cell signaling responsible for inflammation and carcinogenesis (1). Not only is fennel good for reducing inflammation and preventing cancer, but it has also been used for centuries to ease digestion (2).
